Basque cheesecake's take on pumpkin pie. Instead of using canned pumpkin, we roast fresh butternut squash to add the perfect pumpkin-y sweetness in a layer of pumpkin pie-like custard, which is then topped with a layer of spiced basque cheesecake. The pumpkin-y cheesecake-y goodness is then topped with flaky pie crust accents.
